This calculator adjusts a recipe's stated proofing time for your real dough temperature, using the well-known baking rule that yeast fermentation speed roughly doubles for every 17°F rise and roughly halves for every 17°F drop.

It's the same logic professional bakers use when they say "proof it longer if your kitchen's cold" — just turned into an actual number.

How to Read Your Results

Adjusted Proofing Time

The estimated time your dough will need at its actual temperature to reach the same stage of fermentation the recipe intended.

Temperature Difference

How far your dough temperature is from the recipe's reference temperature. A negative number means your dough is cooler and will need extra time; positive means it's warmer and will proof faster.

Rate Multiplier

How much faster or slower fermentation is running compared with the recipe's baseline. A multiplier of 2.0 means fermentation is happening twice as fast; 0.5 means half as fast.

Tips for Better Proofing

  • Use the calculator as a starting estimate, not a timer — always confirm with the poke test or visual cues (roughly doubled in size, jiggly, domed).
  • A slightly warm oven (light on, door cracked) or a proofing box can bring cold dough closer to the recipe's intended temperature.
  • Cold, slow proofing in the refrigerator (retarding) develops more complex flavor and is a deliberate technique, not just a workaround.
  • Watch for overproofing in warm kitchens — dough that rises too fast can collapse or develop a coarse, weak crumb.
