Pitching the right number of healthy yeast cells is one of the biggest factors in a clean, on-time fermentation. This calculator estimates how many viable cells your batch needs based on its volume and gravity, then compares that to the estimated viable cell count remaining in your yeast package after accounting for age-related viability loss.

It uses the same underlying math as popular online pitch-rate calculators: a target pitch rate in million cells per milliliter per degree Plato, and a standard liquid-yeast viability decay curve of roughly 21% loss per month.

Required Viable Cells

This is the total number of healthy yeast cells recommended for your batch size and gravity at the pitch rate you selected.

Wort Gravity in °Plato

Plato is the sugar-density scale the pitch rate formula is built on; this is your entered specific gravity converted automatically.

Estimated Viable Cells in Package

This is how many of the cells originally in your package are still likely alive and viable, after applying the standard age-based decline.

Status

Even a fresh-rated 100-billion-cell pack falls short after a month of age, which is why many brewers make a starter as a matter of routine rather than only when a package looks obviously old.


Tips for Healthy Fermentation Starts

  • Lagers need roughly double the pitch rate of ales, and often multiple packages or a large starter.
  • Keep yeast refrigerated right up until you're ready to make a starter or pitch it.
  • Bring yeast to near-fermentation temperature gradually before pitching to avoid cold-shocking the cells.
  • When in doubt, pitch more rather than less — under-pitching is a more common brewing flaw than over-pitching.
